So it's a Saturday afternoon and I have some spare time to try out a couple recipes. I was in the middle of making brownies (will write about these too) when I noticed I had a pack of firm tofu in the fridge. I also noticed I had some chocolate and those pastry cases in the press were crying out to be used. The dream of combining all of these together turned out to be something incredible. To think I spent absolute hours cooking <a href="http://www.veglej.com/2012/04/cornucopia-silken-torte.html" target="_blank">vegan silken tortes (vegan cheese cake)</a> when these really just taste as good and take a fraction of the time.<br />

Out came the handy food processer and in went the flour, icing sugar and margarine. After it delivered a solid pastry dough, out came the chocolate and tofu. In those went and out came a seriously silky and creamy chocolate ganache like mouse. All done within less than 10 minutes. The end result was some really impressive looking chocolate pies that didn't take that much effort. All that was missing were some raspberries topped with icing sugar to complete the look. These little pies would be great served individually at a dinner party or something fancy like that!<br />

1. Preparing the Vegan Sweet Shortcrust Pastry</h2>
<div>
This was just enough for 2 small pastry cases but double it up if you're making one large pie.</div>

<li>125g/4½oz plain flour</li>
<li>55g/2oz icing sugar</li>
<li>55g/2oz soya margarine</li>
<li>A drop of soya milk/water</li>

<b>1. </b>Throw it all into a food processor until combined/Or work up a sweat and use your fingers to rub the butter into the flour/sugar until you have a mixture that resembles breadcrumbs. Then just bring it all together to form a dough.</div>

<b>2. </b>Wrap it in cling film and place in the fridge for about 10 minutes.</div>

2. Baking the Pastry</h2>

I used little pastry dishes to make mine but you can get creative and use something else. Or if you're making one large pie, use that pie dish!</div>

<b>1. </b>Butter your pastry dish.</div>
<div>
<b>2. </b>Roll out your pastry until flat. Don't worry if it breaks, I just mush it all into other pieces once in the dish.</div>
<div>
<b>3. </b>Place into the pastry dishes.</div>
<div>
<b>4. </b>Bake in the oven for 10-15 minutes or just until done.<br />

3. Making the Vegan Chocolate Ganache </h2>
</div>
<div>
Now you can make the best part, the silkiest, smoothest vegan chocolate ganache. </div>
</div>
<ul>
<li>1 packet of film silken tofu (drained).</li>
<li>As much chocolate as you want really!</li>
</ul>
<div>
<b>1. </b>Melt the chocolate<br />
<b>2. </b>Pour into a food processor with the silken tofu and blend until smooth and silky.<br />

<div>
Once your pasty cases have cooked and cooled, pour the chocolate mixture in and leave to set in a cool area.</div>

I came across a simple vegan chocolate cake recipe online with only a handful of ingredients, so I gave it a go. These cupcakes were into the oven in less than 10 minutes and out in less than 20. Even though these happen to be vegan, I recommend that the non vegan baker try these out! There's no beating eggs and butter and sugar together, just mixing a few ingredients in the same bowl. How to Make the Speediest Vegan Chocolate Cupcakes</h2>

<li>1 1/2 Cups of Flour</li>
<li>1 Cup of White Sugar</li>
<li>1/4 Cup of Cocoa Powder</li>
<li>1 teaspoon of baking soda</li>
<li>1 teaspoon of baking powder</li>

<li>1/3 cup Vegetable Oil</li>
<li>1 teaspoon of Vanilla Extract</li>
<li>1 teaspoon of Vinegar (if you have some)</li>
<li>1 cup of Water</li>

<b>Step 1</b>: Get a large bowl. Sift in the flour, cocoa powder, baking powder and soda, salt and add the sugar. Whisk it up a little bit. </div>

<b>Step 3: </b>Mix gently with a spoon and fold the mixture together until all combined.</div>

<li>1 Large White Onion (Finely chopped).</li>
<li>5 Medium/Large Rooster Potatoes (Peeled and cut in half)</li>

<li>A Large bunch of Kale (as much as you like).</li>
<li>Vegan Butter.</li>
<li>Dairy Free Milk.</li>
<li>Salt and Pepper.</li>

<b>How to Cook:</b></div>

<li>Place your sweet potato(s) in the microwave with the skin on and microwave until cooked. Takes about 5 mins. (The reason I don't boil them with the rest of the potatoes is because the sweet potato is very moist and boiling them makes them very wet). </li>
<li>Peel and chop your potatoes and put them in a pot and cover with boiling water. Boil for about 20 minutes or until they are done. Drain and leave in pot when done.</li>
<li>While the potatoes are cooking wash your kale and remove the leafy part from the stem and place it in a bowl and put it in the microwave. Microwave for about 5 minutes or until soft. Add your onions on top of the kale about half way through to soften. </li>
<li>Add your kale, onions and sweet potatoes(with skin peeled off) to your potatoes and mash it all up with lots of butter and a drop of milk!</li>
<li>Add salt and pepper and serve with buttered bread(trust me it's the best way to serve colcannon).</li>

With kale at it's post autumny peak and carrots still good in the ground, I decided to throw them all into a soup. With that, I also have some thin coriander plants growing left over from the Summer too. Although thin and barely resembling the coriander herb, they seriously pack a pungent coriander punch!<br />

1. Chop all of the vegetables into to small chunks and put aside.</div>

I can't believe the thought of making vegan meatballs had ever crossed my mind. It hadn't until I came across the following recipe for '<a href="http://www.wholefoodsmarket.com/recipe/spaghetti-and-vegan-meatballs" target="_blank">Spaghetti and Vegan Meatballs'</a> over on the <a href="http://www.wholefoodsmarket.com/" target="_blank">Wholefoods Market Blog</a> a couple of weeks ago. The recipe was so simple so I though I'd have a go at making my own meatballs. I didn't stick to Wholefoods's recipe as it called for a few ingredients I don't own. So my attempt at making meatballs, like most meals I cook was a 'bit of this and maybe a bit of that' type procedure. You can enjoy the lentil meatballs in a spaghetti dish or as a sandwich filler. Both work extremely well. The meatballs are extremely filling and packed with energy filled lentils so they make for a great meal at home or on the go. <b>1.</b> Preheat your oven.<br />

<b>2</b>. Boil about 2 cups of puy lentils in stock until as much moisture is gone from them (without burning the pan)<br />

<b>3. </b>Finely chop an onion, chop half a courgette, a good handful of mushrooms into small chunks. Fry the onion until getting soft and then add the chopped courgette and mushrooms along with chopped garlic until the vegetables are cooked.<br />

<b>4.</b> When the lentils are cooked and the vegetables are also cooked - transfer to a food processer or blender (or mash by hand) add your fresh coriander, chilli, dried herbs, seasoning and blend until the mixture is incorporated ( I like to leave a bit of chunk it). Add the mix to a bowl and add a couple of hand fulls of breadcrumbs and mix. Add breadcrumbs until the mixture is no longer wet and is thick enough to form balls.<br />

<b>5. </b>Roll your mixture into small meatball size balls and place on a baking tray and bake for around 20 minutes or until crispy on the outside.</div>

Well a quick Google will tell you that Quinoa is in fact a grain like crop and member of the seed family. It is native to South America and appears to be increasing in popularity across the world due to its associated health benefits. It is a very popular food for vegans and vegetarians due to the high protein content along with other high levels of vitamins and minerals. Although its popularity in the western world has received some negative attention due to the demand pushing the prices up in south america, leaving locals who rely on the crop not being able to afford it. How do I cook Quinoa?</h2>
The second discussion I have with people on the topic of Quinoa is <i>How do I cook Quinoa</i>? It either just sticks to the pan or comes out soggy, is usually what they tell me!<br />
I have previously posted a great set of easy and quick instructions on how to cook quinoa. I learned how to cook it at a Blazing Salads's cooking demonstration. You can read about it <a href="http://www.veglej.com/2012/06/blazing-salads-cooking-demo.html" target="_blank">here</a>.<br />

It's equal parts Quinoa to water. So 250g Quinoa to 250ml water etc.</div>

<b>1</b>. Put the Quinoa in the pan along with boiling water salt and vegetable stock (optional).<br />

minutes. The trick is to leave the lid on as you are going to be steaming it.<br />

<b>3.</b> After simmering take it off the hob and just leave it to rest.</div>

<b>Tip!</b>-<i>I find that to make sure it doesn't stick to the pan or get too compressed, pick the pot up and shake the quinoa around the pot while holding the lid on.</i><br />

Now onto Quinoa recipe ideas. I use Quinoa a lot across a wide range of dishes. I like to cook a large amount and keep it in a plastic container so it's ready to use with various meals.<br />

You can make a vegi burger even healthier and more wholesome by adding cooked quinoa to the burger<br />
mixture. Roast sweet potato, chick pea, kidney bean and quinoa burgers go great together and make a nutrient packed and seriously colorful burger!<br />

There was a buy one get one half price sale on in <a href="http://www.hollandandbarrett.ie/" target="_blank">Holland and Barrett</a> at the time so I took advantage of that and included lots of goodies! It cost me just over 7 euro to ship this to Germany</div>

I received an amazing package full of German products I had never had before. It included some seriously addictive (gone within 5 minutes) Roc & Roll's crisps, chocolate spread, almond tofu, a pudding mix, jellies, soap, a cream and 2 pates! Such a good mix. I've finished nearly all of the products but most of them didn't last more than a few hours!</div>

However, an insider told me that the recipe they now use for their infamous vegan garlic mayonnaise is now made using a more traditional soya milk/oil blend.<br />

150ml (5folz) cold soya milk</div>

2 teaspoons lemon juice</div>

Make sure to check that one out too if you're a fan of carrot cake. Anyway, onto the more traditional vegan chocolate chip cookie (Vegan cookies invade your cookie jar - Isa Chandra). <b>The Vegan Cookie Recipe</b></div>

1/2 brown sugar</div>

1/4 white sugar</div>

2/3 cup canola oil</div>

1/4 cup unsweetened almond milk (or your favorite non-dairy milk)</div>

1 tablespoon tapioca flour</div>

2 teaspoons pure vanilla extract</div>

1 1/2 cups all purpose flour</div>

Preheat oven to 350 F. Lightly grease two large light metal baking sheets.</div>

Mix together sugars, oil, milk and tapioca flour in a mixing bowl. Use a strong fork and mix really well, for about 2 minutes, until it resembles smooth caramel. There is a chemical reaction when sugar and oil collide, so it’s important that you don’t get lazy about that step. Mix in the vanilla.<br />

Add 1 cup of the flour, the baking soda and salt. Mix until well incorporated. Mix in the rest of the flour. Fold in the chocolate chips. The dough will be a little stuff so use your hands to really work them in.<br />
<br />
For 3 inch cookies, roll the dough into about ping pong ball size balls. Flatten them out in your hands to about 2 1/2 inches. They will spread just a bit. Place on a baking sheet and bake for about 8 minutes – no more than 9 – until they are just a little browned around the edges. I usually get 16 out of these so I do two rounds of eight cookies. Let cool on the baking sheet for about 5 minutes then transfer to a cooling rack.<br />

For 2 dozen two inch cookies roll dough into walnut sized balls and flatten to about 1 1/2 inches and bake for only six minutes.<br />

<b>My Tip:</b> If you prefer yours with a bit of <i>crunch </i>add a table spoon or 2 of granulated sugar and leave them in the oven for just a couple minutes longer. Or if you like yours soft and chewy, keep a serious close eye on them. Make sure they don't brown too much!<br />

And it certainly lives up to it's name. I can shamefully admit to eating entire dishes of this to my self in one or two sittings. Please don't judge, I can explain why. You have the pasta and who doesn't love carby pasta? You've got really sweet, soft and flavoursome roasted veg. You've got homemade subtle yet just the perfect amount of pesto and then you've got the baked bread crumbs. Who couldn't say not to that?<br />

So there's a few steps to this heavenly dish: the homemade or (store bought) pesto, the roasting of the veg and the pasta. Here is what to do:<br />

1. Making the Vegan Pesto</h2>
I make my own because it's impossibe to find vegan basil pesto in Dublin. It's really really easy to make and here is how I make it:<br />

<li> 2 standard packets of fresh basil ( as much as you would like really)</li>
<li>A good handful of pine nuts</li>
<li>Nutritional Yeast flakes (as much as you want to taste)</li>
<li>A good old glug of olive oil</li>
<li>A clove of garlic</li>
<li>Chilli (optional)</li>
<li>& Salt and Pepper</li>
</ul>

Throw all of that in a blender and there you have vegan basil pesto!</div>
<b>Pesto tip:</b> Pesto is pretty pricey to make but you can get 2 packets of fresh basil in Tesco for 2 euro. Pine nuts are also majorly expensive BUT you can pick up packets for 1 euro in <a href="http://www.tiger-stores.ie/" target="_blank">Tiger stores </a>which are found around Dublin.<br />

2. Making the Roasted Vegetables</h2>

This is the best part and the sweeter the veg, the better. Chop whatever vegetables you desire into small bite size pieces. The smaller they are, the quicker they cook and the quicker they cook, the quicker you get to tuck into some amazing pasta bake. So season them up and roast until they're soft and juicy.</div>

I like to use peppers, garlic, courgette, mushrooms and butternut squash but anything goes. I do strongly recommend courgette though, you'll understand why if you go with it.<br /></div>

3. Boiling the boring, soon to be exciting Pasta!</h2>

I prefere to use wholegrain pasta but feel free to use normal. I don't have exact measurements for how much to cook but just go with how much you need to fill your dish of choice. Keep in mind that the more pasta you cook you less concentrated the pesto will get. </div>

4. The final steps towards a pesto pasta party</h2>
So once you're pasta is boiled and your veg is roasted and oozing flavour, throw it all in a bowl with the pesto and mix it around until you've got a nice even spread.<br />

For a topping I mixed nutritional yeast and breadcrumbs and a small bit of oil! I also chop cherry tomatos into small pieces, squeeze all the moisture out of them and place on top of the pasta bake so they become crispy when being baked.

A vegan baking recipe made it onto an Irish cooking show! I was pretty surprised when <b>Rachel Allen, </b>Baking extraordinaire featured a vegan recipe on her <b>RTE Cake Diarys show</b>. The Ingredients</h3>

<li>225 g (8oz) plain flour</li>
<li>3 tsp baking powder</li>
<li>1 tsp bicarbonate of soda</li>
<li>1⁄4 tsp salt</li>
<li>75 g (3oz) caster sugar</li>
<li>Finely grated zest of 1 orange</li>
<li>150 g (5oz) fresh (or frozen and defrosted) raspberries</li>
<li>225 ml (8fl oz) soya or rice milk</li>
<li>50 ml (2fl oz) sunflower oil</li>
<li>1 tblsp cider vinegar</li>
<li>1 tsp vanilla extract</li>
<li>12-cup muffin tray and 10 muffin cases</li>

<b>1.</b> Preheat the oven to 180°C (350°F/Gas 4), and line the muffin tray with the paper cases.<br />

<b>2.</b> Sift the flour, baking powder, bicarbonate of soda and salt into a large bowl, then mix in the sugar and orange zest. Carefully fold in the raspberries and set aside.</div>

<b>3</b>. In a separate bowl, whisk together the remaining ingredients, then add these to the flour mixture, folding in to combine. Divide the batter between the muffin cases, filling each three-quarters full, then bake for 15–20 minutes or until golden on top and springy to the touch.<br />

If you have a food processor, blend the kale up with white onion and mash into mashed potatoes with loads of butter(I use Pure Sun Flower) , salt and pepper and you're done. Taste's great on buttered bread too.<br />

All the measurements were in cups, but I got my hands on a cup measurement jug so I could bake to my hearts content after that. The book itself is really great and has so many amazing recipes in it.<br />

1 tablespoon ground flax seeds ( I didn't add these)<br />
1/2 cup vegetable oil or peanut oil<br />
1/3 cup dark brown sugar<br />

1/2 teaspoon orange zest<br />
1 1/2 tea spoon vanilla extract<br />
1 3/4 cups all purpose flour<br />
1 teaspoon baking powder<br />
1 1/2 teaspoons ground cinnamon<br />
1 teaspoon ginger<br />
1/2 teaspoon nutmeg<br />
1 cup finely shredded carrots<br />
1/2 cup shredded coconut<br />
1 cup raisins<br />
1 cup walnut (optional really)<br />

<b>1.</b> Preheat oven to 350 degree farenheit and grease or line 2 baking sheets with baking paper.<br />

Mullins Hill is one place in Killiney that covered in overgrown blackberry bushes and where the BEST are found. During the summer the hill becomes some what of a sun trap so the berries benefit from the heat slowly sweetening them up for Autumn. </div>

I made a crumble pie using blackberries I collected along with some cooking apples. I followed the same crumble recipe I've used before <a href="http://walkingdogsandwritingblogs.blogspot.ie/2011_08_01_archive.html"><b>here.</b></a> I just used blackberries and applies instead of raspberries and blueberries. I made a vegan shortcrust pastry base which was very easy to make as well. </div>

I got a map of Budapest and marked out on the map where all the vegi/vegan restaurants were. I did this with the help of searching 'Vegan' into google maps and of course with happycow.net. This is a very handy way of knowing what restaurants are near by. There was always options nearby the major attractions!<br />

Breakfast was the only tricky part. I'm not much of a breakfast person as well. So breakfast consisted of bread, Starbucks and some fruit. Eden Vegan restaurant on Buda Hill do a vegan breakfast, but we didn't make it over for breakfast.<br />

I stayed in the amazing Corinthia Grand Royal Hotel, Which was amazing! I never get to stay in very luxury places but we got a good deal so why not! The room service menu and the various bar/restaurant menus were very accommodating to those with allergies. Each dish stated if it contained eggs, diary etc. This was great to see. I had pasta on the first night.<br />

We were luckily located a few blocks away from <b><a href="http://www.napfenyesetterem.hu/">Napfényes Étterem</a> </b>vegan restaurant. I had a great experience here and the food was great. The<a href="http://www.napfenyesetterem.hu/english"> menu is available online</a> so we were able to have a little look before. They have loads of vegan pizzas but I had a horrible cheesless pizza that day that was enough to put me off pizza for a while. I wasn't that hungry but I over ate anyway! Don't think I had ever eaten in 100% vegan place before. <b> </b>The location is quite great, it's located right beside the Batthyany Terace metro stop which is on the red line. It is also located at the bottom of buda hill which is home to many many attractions. It's about a 10 minute walk up to the hill. So very convenient, you can grab a vegan breakfast before setting off to Buda castle or you can enjoy lunch after a morning of exploring. Down to the food, I'll be honest in saying that I can't really remember what I had but there was a great selection to choose from, including desserts and smoothies.<br />

There are a few located around the city and 2 of which are fully vegi. We never made it to one of 100%vegi ones! But we ate a couple of times at the other locations. They have a wide range of food to offer and lots of vegan falafel options. Seriously handy and very cheap. Also great if you're travelling along with non vegi friends! Each purchase comes with a shot of delicious lemonade which makes you want to buy a whole glass! We opted for the falafel wraps the few times we were there. There is one restaurant located around the corner from St. Stephen's Basillica and also on the same street as the Jewish synagogue. So close to the major tourist attractions, if you're visiting them!<br />

While attempting to do work in the library I packed my bags and went to the shops and picked up some flour and yeast to go make these. After finding a simple enough recipe the day previous, I was set to go. <a href="http://veganyumyum.com/2009/05/perfect-cinnamon-buns/">I followed this recipe here.</a> It's from a vegan blog called Vegan Yum Yum! These buns are so soft, sugary and of course cinnamony. I put way much more cinnamon than the recipe intended. I just kept pouring! The more the better. What I find about some cinnamon buns is that they are quite bready and dry, these aren't though. As they are made with plain flour, opposed to strong white flour(used in bread making), they are soft and doughy.<br />

I also used a mixture of caster and brown sugar for the filling with LOADS of cinnamon, yum yum yum!<br />

They’re a coconutty, oaty, raspberry and chocolate all rolled into one bar of delicious goodness. So here’s the recipe! They’re a recipe from the book ‘Sweet Vegan’ by Emily Mainquist.<br />
<br />
<b>Oat, coconut, raspberry, chocolate bars recipe</b><br />
<br />
-195g plain flour<br />
-160g soft dark brown sugar (I just use caster sugar if I don’t have any brown sugar)<br />
-1 teaspoon baking powder<br />
-225g stork margarine<br />
-120g porridge oats<br />
-45g desiccated coconut<br />
-350g raspberry jam (I just use a whole jar or near about. I don’t measure it)<br />
-90g chocolate chips/chunks (just chop up a chocolate bar.<br />

<b>1.</b> Preheat oven to 180oC.<br />
<b>2</b>. Get a baking sheet or tin and line it with baking paper or heavily grease with butter/margarine.<br />
<b>3.</b> In a large bowl, combine the flour, sugar and baking powder and whisk together until well combined.<br />
<b>4</b>. Using an electric beater start beating in small chunks gradually to the flour mixture. Beat until the mixture resembles coarse sand. Make sure there are no large margarine chunks.<br />
<b>5.</b> Add the coconut and oats and mix again until well combined.<br />
<b>6.</b> Press about 1/3 of the dough onto the baking sheet. Make sure it’s quite equal levelled. I sometimes use a rolling pin to flatten and spread it out. (Remember there’s baking powder in the recipe so it will rise slightly.)<br />
<b>7. </b> Then spread the jam on top on the dough. And then place the remaining dough on top of the jam. I break up little chunks of the dough and spread it around the top. Then sprinkle the chocolate chips on top.<br />
<b>8.</b> Bake for 20-25 mins until bubbly and golden brown. Cool in the tin on a wire rack.</div>

Her parents have an apartment there and while her Dad was over for 3 weeks, we decided to head over for a week.<br />
The area itself is beautiful and is surrounded by acres of farms with sunflowers and other various fruit and vegetables. I've been to the area many times before but I think I only apreicated how nice it was this time.<br />

I was kind of worried about eating while there. I don't think vegetarianism is generally common in the country side. However, it turned out to be just fine! I packed a packet of falafels and some nakd bars to keep for going for a couple days. I bought fresh bread daily in the bakery around the corner, Heinz baked beans, fresh vegetables and fruit and LOTS of dark chocolate and fruit. I used to spend my time eating fresh chocolate croissants from the bakery, they were sorely missed this time.<br />
<br />
Eating out is where it became a little bit tricky. I enjoyed some fresh vegetables prepared in different ways, Catalonia bread, pizza sans cheese and mainly. <br />

It is really easy to make and is full of flavor. Between the Quinoa and Sesame seeds in this dish, you're sure to get a sufficient about of protein and calcium.<br />
<br />
Depending on how many people you're cooking for, the amount of Quiona varies. I usually go for 100g per person.<br />
This recipe includes Quinoa, Sweet Potatoe, Pepper, Chilli, Garlic, Soy Sauce, Seeds, Salt and Veg stock/Bouillon, parsley.<br />
<br />
This recipe serves around 2 people, depending on how hungry you are! You can add as much and as little veg as you like.<br />
<br />
1. Start by chopping your peppers and sweet potatoes. Chop them into relatively small strips, so you don't have to spend ages cooking them. Also add chopped garlic and chilli and olive oil. Sprinkle with a little bit of dried basil.<br />
<br />
2. Just before you put your veg into the oven, throw some seeds onto a tray and sprinkle with soy sauce. And then throw them all into the oven. Cook seeds for aprox 10mins and veg...until done!<br />
<br />
3. Now for the Quinoa. Put 200g of Quinoa into a pot and boil 200ml of water. ( 200g =200ml water, 300g + 300ml water..etc)<br />
<br />
<u>How to successfully cook Quinoa: </u>Add the boiling water to the Quinoa, put the lid on (important you do), bring to boil and simmer for 15 mins.<br />
Still keeping the lid on, after 15 mins of simmering, turn the hob off and allow it to steam for another 15 mins. And Voila, light and fluffy Quinoa!<br />
<br />
4. When Veg is done and Quinoa is done, mix it all together with the toasted seeds.<br />
Chop a spoonful of 2 of parsley and throw that in there too.<br />
Add salt to taste.<br />
Add a couple splashings on Soy Sauce. <br />

Everything tastes great in there. For those who haven't heard about Blazing Salads, it is a Vegetarian /Vegan deli on Drury St, Dublin.<br />
They have a seriously amazing vegan salad bar which contains a variety of different salads and toppings. You fill up a box with as much or as little as you want of the different salads. There is also hot food and soups which change daily, cakes, burgers, pizza and more!<br />

Anyway, I got the opportunity to attend a Blazing Salads's cookery demonstration at the Dalkey Book Festival given by founders Pamela and Lorraine. They gave a very humble demonstation to a small crowd, provided great recipes, tips and most importantly, let everybody try the goods! They made a roasted vegetable quinoa salad and chocolate nut bars. The quinoa tasted amazing so I gave it a go this morning! They also gave great instructions for successfully cooking quinoa, see blow!<br />

<b><u>How to properly cook Quinoa:</u></b><br />
<br />
I had never properly known how to cook quinoa before. Pamela and Lorraine gave a reliable method which works every time.This was great news for me because I like many people end up with wet and soggy quinoa!<br />
It's equal parts quinoa to water. So 250g quinoa to 250ml water etc.<br /><br />
<u>Cooking Quinoa successfully: </u><b>1</b>. Put the Quinoa in the pan along with boiling water salt and vegetable stock (optional).<br />
<b>2.</b> Put the lid on the pot and leave it on (this is very important). Bring to the boil and simmer for 15 minutes. The trick is to leave the lid on as you are going to be steaming it.<br />
<b>3. </b>After 15 minutes of simmering just leave it to rest.<br />
<br />
I find that to make sure it doesn't stick to the pan or get too compressed, pick the pot up and shake the quinoa around the pot while holding the lid on.<br />

While the quinoa is cooking <i>prepare the veg</i>. Chop the Aubergine, Courgette, Pepper into small chunks. Put the veg on a roasting pan along with the chopped garlic and olive oil. Sprinkle a pinch of salt and dried basil on top. Roast for about 20 minutes. Take the vegetables out and pour the tinned tomatoes over the veg and bake for a further 15 mins until soft.<br />
<br />
Add the chopped parsley, basil to the quiona along with a few swigs of olive oil. Add salt to taste. When the veg has cooled, add it to the quiona. So yum and easy!<br />

I already knew this and always add them to my salads and hummous for extra nutrition. Sesame seeds in particular are very high in calcium. They introduced me to a delish new way to eat them, toasted with soya sauce! I always just eat mine raw but these cooked ones tasted amazing. Seeds are readily available and you can get packs like this in the whole foods section in Tesco. </div>

I call these chocolatey, oaty, raisiny, peanut buttery and coconuty cookies. They basically have a load of yummy ingredients in it.<br />
They are slightly dangerously easy and quick to make though. I've found myself twice this week wiping up a batch for myself..<br />
<br />
<u>Anyway, here is a recipe and I highly recommend it.</u><br />
I don't have exact measurements for most of the ingredients as it's really down to your own taste. <b>Everything is optional in the recipe really!</b><br />
<br />
<b>200g Plain Flour</b><br />
<b>Cocoa powder.</b>.as much as you want! Depends of how much you like chocolate<br />
spoonful of<b> Cinnamon</b><br />
<b>Desiccant coconut</b>..as much as you want! I just use a good sprinkling<br />
<b>Oats</b>.. I use a good handful or 2<br />
<b>Raisins</b>..as much as you want! The more the better, I find.<br />
<b>Chocolate chips</b> (optional)<br />
-<br />
<b>120ml Vegetable oil</b><br />
<b>100ish grams Sugar</b> (I use a mix of caster and soft brown sugar) Anything goes!<br />
<b>60ml Water</b><br />

<u>Bowl 1 </u><br />
Combine the flour, cocoa, cinnamon, Oats, Raisins, Chocolate in a bowl (The first half of the ingredients)<br />

Combine the oil, sugar and water together until well mixed.<br />

Add the wet to the dry ingredients and mix together. Then just roll out little balls and flatten them down onto a baking tray!<br />
